Sweet Wine, from raisins, 100% variety Pedro Ximenez, is being recollected at the same as the grapes for fine wines. The grapes, however, are first sundried and layed out over the traditional ' capacho' until a Beaumé level over 22-24º is reached. The difference to the anterior is that this P.X. is from 1961 with 38 years in American oak barrels. It is recommended as a dessert wine at a temperature of 15º. This wine becomes even better with time.
